The hills which extend between
Modena and Bologna have a secular wine tradition. In particular, at the
bottom of the hills by Modena's side, particularly in Castelvetro and Vignola areas
(both are in the "Cities of the wine" list), Savignano sul Panaro
and Spilamberto, we find the Lambrusco Grasparossa D.O.C.. It's sweet or dry,
with red color with violet shadings. Lambrusco Grasparossa's quality
is guaranteed not only by the natural vocation of the territory but also
by the rigorous controls of the Consortium. Those wines are divided in
three categories based on colors: white, red and vin rose'. We have the
grapes picking and the tamping from which must is obtained. The result mixture
goes into great containers where the first fermentation starts. Its duration
depends from the type of wine. The total transformation of the grape sugar
in alcool gives birth to the dry wine, while an incomplete fermentation,
arrested naturally, offers wines quite sweet at taste. |
